The key to picking a good avocado is picking a ripe, but not too ripe avocado. You want one that has a little bit of a give when you squeeze it. Here are some great healthy variations to try for your next avocado toast!
Cottage cheese and everything bagel seasoning - Mash the avocado and spread on the toast. then top with your favorite cottage cheese and a generous sprinkling of everything bagel seasoning.
Top with an Egg - Mash the avocado and spread it on your toast. Top with an egg cooked your favorite way. (We are partial to over-easy or poached.)
Tomato Basil with Balsamic Drizzle - Top your avocado toast with a few thick sliced tomatoes, add a light drizzle of balsamic vinegar or balsamic glaze, and some chopped fresh basil leaves.
Arugula and Goat Cheese - Top your avocado toast with a handful of arugula, crumbled goat cheese (or feta), and a squeeze of fresh lemon.
