Food Club Bacon & Pea Pasta Salad

Need a salad for your Labor Day BBQ? Food Club has the perfect pasta salad that will pair perfectly with any grilled meat or vegetables.

INGREDIENTS

For the Salad

  • 8 slices Food Club thick-cut bacon, cut into 1/4" pieces
  • 12 oz. dry small pasta shells
  • 12 oz. frozen petite green peas, thawed
  • 1/3 cup red onion, small diced

For the Dressing

  • 1 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, finely chopped
  • 3 tablespoons fresh chives, finely chopped

DIRECTIONS

  1. Cook cut bacon in a large skillet over medium-high heat until crispy, and place on a paper towel-lined plate to drain. Set aside.
  2. Cook pasta shells in boiling, salted water as directed on the pasta packaging. Pour pasta into a large colander and rinse under cold water until chilled and set aside.
  3. Make the dressing by whisking together the mayonnaise, olive oil, lemon juice, mustard, salt and pepper until smooth and then stir in the parsley and chives.
  4. Prepare the salad by placing the pasta shells in a large mixing bowl and adding the bacon, peas and red onion. Pour the dressing into the bowl and toss to combine until all the ingredients are well distributed and coating in the dressing.
  5. Serve chilled alongside your favorite grilled entrees.
