Tex-Mex Zucchini Boats

Your neighbor was generous and shared their garden bounty of zucchini with you, but you're not sure what to do with all of them? Try these zucchini boats with a Tex-Mex flair!
Ingredients:
- 3-4 medium zucchini
- 1 can black beans
- Corn (canned or frozen)
- 1 onion, chopped
- 1 tsp. minced garlic
- 1 can of enchilada sauce or 1 packet of taco seasoning
- Salt, to taste
- Cumin, to taste
- Preferred cheese
Directions:
- Chop off the zucchini ends and then cut in half lengthwise.
- Using a spoon, hollow out the halved zucchini. Set to the side.
- Coat the bottom of a skillet with oil and saute the chopped onion until translucent. Add the garlic and saute for another 2-3 minutes, constantly stirring to prevent burning.
- In the same skillet, brown the ground beef.
- Add black beans and corn (make sure all extra liquid has been removed) and enchilada sauce or taco seasoning. Add additional salt and cumin to taste.
- Allow mixture to combine and set to the side.
- Lay out the zucchini boats on a baking sheet and fill with the mixture.
- With the oven set at 400 degrees, allow the filled boats to bake for about 25 minutes.
- The last 5 minutes, add your preferred cheese and put back in the oven for 5-10 minutes until cheese is melted.
- Serve and enjoy!
